Baked Chicken Parmesan Recipe

This Baked Chicken Parmesan recipe is healthy, simple to make and tastes delicious, too! Pair it with a pasta side, Caesar salad and a glass of wine.

Ingredients

2 chicken breasts

½ cup Italian-seasoned breadcrumbs

1/8 cup grated Parmesan cheese, fresh or dried

1 tbsp olive oil

½ cup shredded mozzarella cheese

1 jar pasta sauce

cooking spray

1 package spaghetti, or pasta of choice

 

Directions

1. Preheat oven to 350°F. Spray a small casserole dish lightly with cooking oil.

*Alternatively, bake chicken on a greased baking sheet at 450°F for half the bake times indicated below.

2. Combine breadcrumbs and parmesan cheese in a bowl. Pour olive oil in a separate small bowl.

3. Slice the chicken breasts in half lengthwise to make four pieces. Lightly brush olive oil onto both sides of the chicken.

4. Dip chicken into the breadcrumb mixture and place in the casserole dish. Repeat with the remaining chicken.

5. Bake uncovered in oven for 25 minutes. Turn once and bake for another 25 minutes, or until chicken is cooked.

6. When chicken is nearly cooked, cook spaghetti according to package directions. In a separate saucepan, heat pasta sauce until heated through.

7. Remove casserole from oven, spoon 1-2 tbsp. sauce over each piece of chicken and top with shredded mozzarella cheese.

8. Bake for 8 more minutes or until cheese is melted. Then broil for 1-2 minutes or until cheese is slightly browned.

9. Serve chicken on a plate of spaghetti and, if desired, a side Caesar salad and a glass of wine.

*Take it a step further: Romance your sweetheart by setting the table with some lit candles and/or a lovely floral centrepiece, dim the lights, and play soft music in the background.
