A Recipe of Comfort

Do you remember the iconic ice cream trope in films and TV shows when a woman (occasionally a man) is having a bad day so s/he plops down on the couch with an entire tub of ice cream and eats straight from it with a tablespoon?  Do you find yourself having a day like that, craving foods that will make you feel better?

Most comfort foods are high in fat content, have very little nutritional value, and are full of preservatives with long names you couldn’t pronounce if your life depended on it. When it comes to eating healthy, my rule of thumb is: if it can’t be pronounced, don’t put it in your mouth.

So what can you eat when you’re having a bad day and just want to plop down on the couch with a bowl of comfort food and watch Netflix? Why not try a bowl of Cheesy Broccoli Rice Casserole to satisfy your need for comfort food instead of a tub of ice cream or a bag of chips?

The below Cheesy Broccoli Rice Casserole Recipe is rich in protein and contains three out of four food groups: grains, dairy and vegetables. The cheesiness alone will satisfy that hunger for comfort food! It’s a much healthier alternative to a bag of chips and it’s simple to make, too! So forget the chips and ice cream and give yourself the nutritional comfort your body needs!

 

Cheesy Broccoli Rice Casserole

Makes 4-6 servings

Ingredients

2 cups cooked long grain white rice (or 1½ cups uncooked minute rice)

2 cups shredded cheese of choice (cheddar, mozzarella, smoked gouda, havarti)

2 cups broccoli florets (or 1 cup broccoli plus 1 cup cauliflower, if desired)

1 cup sliced mushrooms

1 can condensed cream of mushroom or broccoli soup

284 mL milk (measured in cream of mushroom can)

 

Directions

1. Cook 1 cup of long grain white rice according to package directions. Once cooked, it will make approximately 2 cups of cooked rice. *Note: If you’re using minute rice, skip step 1 and start at step 2.

2. In a deep 3-quart glass casserole dish with a lid, whisk together condensed cream of mushroom or broccoli soup and milk until there are no lumps.

3. Stir in cooked long grain white rice or uncooked minute rice. Add shredded cheese and mix.

4. Add sliced mushrooms and broccoli, stirring in until coated.

5. Cover and microwave on high for 10 minutes, stirring once.

6. Let stand, covered, for 5 minutes before serving.

*Need more protein? Pair this casserole with baked fish, such as salmon, or grilled chicken breast.
